Rum & Raisin Frozen Yoghurt

I normally don't post that many recipes, because most of what I make is pretty simple, or is somebody else's recipe with a few changes. This was one of the simple ones, but it tasted so great I had to share!!!

If you're a fan of rum & raisin flavours, which I am... this will hit the spot :)

I was trying to think of more ways to get more calcium in my diet, and brainstorming ideas for mix-ins to make frozen yoghurt. Especially as it's so hot here right now. Then I remembered I had rum essence...

Anyway, this is a pretty loose recipe since it depends how much you want, and I kinda threw it all together last minute last night, but:

Ingredients:
100-200g of your favourite greek yoghurt (I used half and half - one was full fat greek and one a lower fat)
Tablespoon of raisins (or more / less...)
Drop of vanilla essence
Drop of rum essence
2T Cocoa powder
2T Sweetener of choice (or however much you want!)
Splash of almond milk

I also added half teaspoon of vodka because I thought that might help keep it softer, but that didn't work... so maybe don't bother.

I pretty much smooshed it all together in the Skinny Cow cup, and left it to freeze overnight, then microwaved it for 15 seconds to get it to froyo consistency. I suppose you could also just put it in the freezer for an hour and it would be at the consistency.

One modification you could make would be to soak the raisins in actual rum for a while first to infuse them with the flavour, or leave the chocolate out... I like my rum & raisin with chocolate :)

Procrastination in many forms...

It's study week for exams, so naturally there is loads of procrastination through the form of delicious foodstuffs, exercise, and... there is always so much stuff to tidy up! (Don't forget the blog I am writing right now...)
I don't know what it is with me this semester, I think I've kinda broken or something... but I just don't have the motivation I had last semester. 
The uni has shortened all the semesters, so instead of two weeks off, we have one. Instead of a long mid-year break, it's only 4 weeks. So basically the entire year of teaching is squished between March and October, and then we get an insane four months off. Don't get me wrong - I'm seriously looking forward to those four months!! But it means I've been super stressed for the other eight, with little break in between, and I'm sooo over it. Anyway...

One of those weird apple-apricot-oat muffin-brownie things, covered in yoghurt mixed with peanut flour. It kinda made an icing!

Baby poo pudding. Well, it actually looked more baby poo coloured in real life... this was avocado, banana, spinach, cocoa powder, protein powder... and probably other stuff, I've forgotten now. It tasted better than it looks!

I finally jumped on the bandwagon and had a sweet potato with almond spread & greek yoghurt. Now I see. I understand!

Finished my Justin's Hazelnut Butter and of course had oats in a jar... bittersweet moment.

As much as I dearly love blogs that are full of foodie pictures and exercise stuff, and as much as I want to include that in mine, I don't want it to be all about that stuff. I've never been part of "mainstream" or "popular". I've always been on the outskirts. So I guess I kind of want my blog to reflect that. 

I'm not a goth or emo or anything like that, I guess it's more that my social anxiety has led me to become more isolated than I would like to be, and while people seem to like me, that's as far as it usually gets. OK, gone off on a tangent there!!

I would like to actually write more often though. Probably after exams. I have three - Chemistry, Anatomy & one that is pretty much social / environmental / biological etc determinants of health, but has a much longer name.

All right I'm going to have to stop writing now and actually start studying.

WIAW #6 - No vegies, lots of fruit!

My favourite food for the last couple of days...


This morning's breakfast was yet another repeat of the Banana Bread Protein Pancakes (although I had no cottage cheese, so subbed in greek yoghurt... which made it a runnier mixture - but oh well!) I put apricot jam on top, a quick berry sauce made with pretty much microwaved raspberries and some sliced nani's. 

A Clif Bar :D That's right, I got an order from iHerb on Monday and was pretty excited to dig in to all these goodies I've been seeing on blogs. Think this was the Brownie flavour??

Apple... I have these every day... keeps the doctor away, y'know?

Ha these pictures are not really in order... this is my berry 'sauce'... I jsut thought it looked pretty :D

This is yesterday's banana with PB on it... I kinda took the pic when I'd already eaten most of it. And if you ever wanted to know the definition of laryngopharynx... well that's in the background of the pic!

My iHerb package.. Kashi Go Lean (no wonder everyone eats this, with 10g protein, 10g fibre with each serving!!), peanut flour (which I used this arvo making Sweet Tooth Runner's mini PB muffins - still in the oven ;), clif bars, luna bars, quinoa flakes, almond milk and Justin's hazelnut butter. Haven't dug in yet... but I'm thinking it will be soon!

Yesterday's unattractive 'pina colada' oats I made up... pretty much oats, greek yoghurt, pineapple and coconut butter. Unfortunately somehow the coconut butter solidified on mixing so I had big clumps of coconut butter and the flavour didn't really go throughout. Bummer!

Monday's carrot cake oats... I think I got this from a recipe somewhere, but I can't remember where!! And I didn't have anything to use as a "cream cheese" icing, so it's kinda greek yoghurt mixed with leftover custard... haha, sort of worked?!

Today's lunch... no wonder I'm still full at 5pm, when you see the crazy thickness of the PB! This is kinda my go-to lunch whenever inspiration does not strike. It's why I've been trying to plan my lunches out or make lunches on the weekend instead, because while I know PB is good for you to an extent, having PB sandwiches every day is not... especially when it means I'm not getting in as much vegies as I could!!! Do you see any vegies at all on this page!?

Trying some new foods...

So today I was a little more adventurous with my food intake, taking note of a few blogging favourites out there and giving them a go!!! I love blogging because of that, I've discovered so many new things to eat and ways to make things :)

Breakfast was pumpkin oats, with a spoonful of ABC spread on top. I wasn't hugely fond... it was nice, and healthy, but it really wasn't something I would rave about and eat over and over... especially with the fact I had to actually cut up, cook and blend a pumpkin to make it! (Although this was made with leftovers from yesterday's muffin mix)

For a snack I tried this one, which I think I found from .running with spoons.'s blog - crumbling up a muffin and mixing with yoghurt. This is one of my pumpkin muffins from yesterday's post, with a bit of strawberry jam, some greek yoghurt and cinnamon. Pretty good combination, will definitely have it again! Especially if I have dry or overcooked muffins, as the yoghurt makes it nice and mooshy.



Then I tried this kombucha stuff. This was "original recipe". I have to admit... I'm not a fan. The first mouthful tasted like vinegar, the second sort of reminded me of beer, or cider that was kind of off. I'm not overly convinced of the health benefits either as there is conflicting information out there about it. I gave it a good go though, drinking about half of the bottle. I tried diluting it with water, but I was not won over!! Yeeuck! Maybe it's better if it's flavoured or something? I dunno, but it was gross.

Workout today: went for a short 3.7km run, took it slow as for some reason my knees are now playing up. Sigh. I tried to get the motivation to go to a BodyPump class but it just wasn't happening, my body seriously wanted to just get out there for a run, so I listened to it.
